More Restrictive Low Carb Diets
First of all, you must realize that nearly all low carb diets will cut your carb intake for the first two weeks to only 20-30 grams of carbs a day, depending on which low carb diet it is. This is to get your body into fat-burning mode. The more restrictive ones (like Atkins and Neanderthin) will allow you up to 60 grams of carbs a day after that. Then when you've reached your goal weight, you can have what your body truly needs--130 grams a day.

You don't need to weight everything you eat under any safe low carb diets.

The reason so many of us are overweight now is because we eat far more than 130 grams a day, and we usually eat simple carbs--that is, foods made from refined sugars and white flour. Healthy low carb diets put the focus on cutting the bad stuff and keeping the good

Less Restrictive Low Carb Diets
After your initial two-week period on less restrictive plan (like South Beach and Sugar Busters), they gradually reintroduce complex carbohydrates back into your diet. Complex carbohydrates take longer for your body to break down and digest, so you feel full longer, and you don't crave carbs. These low carb diets allow you to have some fruits and a lot of vegetables (except starchy ones like potatoes, which should only be enjoyed once in a while and in moderation). They also encourage you to have whole grains and foods made with whole wheat.

The best thing to ensure success on a low carbohydrate diet is to buy a book on the diet you choose and read it before you start the plan. Then if you start that particular diet, follow it to the letter so you can stay healthy. Find which low carbohydrate diets suit you.
